Medieval roast beef

Description

One of the most common methods of preparing meat in the Middle Ages was to roast it on the charcoals, and then serve it with a sauce. An ancient Tuscan recipe from the 1300s recommended covering the meat with a mixture obtained from the minced lard pounded in a mortar, mixed with a drizzle of olive oil and pouring a little wine over the coals , to control the cooking temperature.
